Winner of Tropical Traditions Shredded Coconut

I also want to thank everyone who left an idea, in their comments, for what to do with all this coconut!  I still have plenty left and can't wait to make some more delicious coconut foods!

Mrs. White, I am certain you can peruse your cookbooks, or the internet, to find some scrumptious recipes in which you can use the coconut. I thought immediately of coconut pie - one of my favorites!

I make a very simple, but delicious, salad using coconut. It's super easy, but I seem to serve it only on holidays. It is especially good as a side dish with Easter ham or Thanksgiving turkey. The salad is part of our traditional family holiday menu.

It's called 5 Cup Salad. You would need to double it for your family.
Here it is;

5 Cup Salad

1 cup mandarin oranges, drained
1 cup crushed pineapple, drained
1 cup miniature marshmallows
1 cup sour cream
1 cup coconut

Mix all ingredients together well and chill for several hours before serving. Garnish with pecan halves and/or maraschino cherries.

It really is a tasty dish, and a cold salad might be just the thing to serve on a hot summer day.
